The cuvage LA CHAIZE is the longest of the Beaujolais

The Cuvage Winery : since the vineyard rapidly expanded during the XVIIIth century, the cellars beneath the castle became too small, and the current building (1771-1811), was then built . The 110 ms long building still bears its original roof. The vaulted cellars shelter large oak barrels where the Brouilly is maturing during months before the bottling. The 'Cuvage' (listed as Historical Monument) was also restored and one can still admire an old squirrel-wheel press dating 1811.

During the last twenty years, the cellar has been equipped to meet the latest technical requirements for a complete wine-making process carried-out on the estate: Fenwick gas elevators to avoid any pollution during the transport of the grapes, stainless 'vendanges' vats (12 H), stainless vats (150 H) for the wine making, Bucher press with membrane (50 H), thermal control of fermentation affixed to each vat in order to avoid pumping of the wine, and two levels separation stainless vats.
